Guest Post from Dish by Trish: Grape Ambrosia Salad with Toasted Almonds


My long time blogging friend Trish, from Dish by Trish was kind enough to help me out with a guest post while we are getting all moved into our new home across the valley. This has proven to be quite the challenge with 4 kids and all of the junk we have accumulated over the years, and I'm not one to keep or collect anything so it confounds me how much crap we have! Time to simplify things! Nothing like moving to make yourself get ultra organized, super fast!

Ever year, my family would gather at my godparents' house on Christmas Eve. Aunts, uncles, grandparents, cousins, the whole gang. I distinctly remember cracking walnuts and opening roasted chestnuts in their dim living room next to the warm, decorated fireplace. My sisters and I would congregate in my godmother's walk-in closet and try on her furs, jewelry and high heels in secret, and then walk around her bedroom impersonating older female family members.




And I'll never forget that fluffy, heavenly bowl of sweetness sitting on the kitchen table that my godmother prepared every year. This marshmallowy gooey mess (aka ambrosia) always put on a smile on my face.




This recipe is a tribute to my dear godmother, Marie.




It's a modern, healthier rendition of ambrosia. It's not gooey or as fluffy as the traditional ambrosia but it's no less delicious. Hope you like it.














A couple of notes:

  • If you're using frozen pineapples, be sure to defrost them in advance. Also, chop the pineapple chunks into smaller pieces. I don't recommend pulsing them in a food processor (like I did) because it draws too much water out of them.
  • I added both red and green grapes for optimal color because the dish can lack color. I recommend adding 3/4 cup green grapes and 1/4 cup red grapes. The red grapes can be a bit astringent which is why I added less.
  • If you'd like, you can use sour cream instead of Greek yogurt, but I don't recommend using just plain yogurt due to its higher water content.
  • I tried using honey and the taste was just not the same. Feel free to use other sweeteners but if you prefer using honey I recommend halving it with another sweetener because the honey flavor can be overpowering.




Grape Ambrosia with Toasted Almonds


16 ounces frozen (unsweetened) pineapple chunks, thawed and chopped

3/4 cup flaked coconut, unsweetened

1 cup fresh seedless grapes, halved or quartered

2/3 cup Greek yogurt, nonfat

3 tablespoons sugar

1 ounce sliced almonds, toasted (optional)




In a large bowl, combine pineapples, coconut and grapes. Add yogurt and sugar and mix well. Chill for 30 minutes before serving. Top with toasted almonds and drizzle with honey, if needed.




Serves 5-6.

BIG SHOULDERS




Well…not as big as they used to be physically but my mental and emotional shoulders are definitely making up for that loss…lol.  What the heck does this have to do with fitness, my life, my health…I say everything!



When you are in a position of internet personality, helping people from around the world, bravely putting yourself out there for all to see through images, videos, and opinions…well…the mental shoulders get well developed.   As you know, I am a say it like it is person, trainer, consultant, coach, expert and any other name that gets tagged onto “Darla” the fitness gal.  In this position, I MUST remain POSITIVE  and let things roll off my back like a duck sometimes.  The majority of the time, I am taken with appreciation, and thankfulness from so many for providing the hope they thought was never possible…touching to me as my purpose to help has been accomplished.

The other side of the coin can be exactly the opposite and filled with statements from people who do not take the time to know ME and jump into an attitude of sharing only judgments and negative comments.  I can read through that into an unhappy soul who really wants to be healthy and the BEST, but not at a place in their life and unwilling to make that happen, and it is always easiest to lash out at someone than take responsibility for self.   Really…I would like to reach out and give all those people a hug…NO…I really do…because they just need to have the encouragement and love to realize their fabulous potential. 

 















I do not need to go into statement details but anyone who sits in my position as a fitness expert who has put themselves out there understands the lashings that can come in reference to a fit body, workouts,  personal life, sharing success stories, making opinions and comments, and even recipes for crying out loud.  I was taught never to judge a book by its cover and this is so important in life, but especially in what I do for a living as I see people of all shapes and sizes…and they are ALL FABULOUS!!!  Could you imagine if I was a judgmental person…well…NO WAY…I could not do my job if I was running people into the ground for being too heavy, too skinny, low self esteem, body image issues, hairstyle, clothes, and the list can go on and on…how in the world would I MOTIVATE or help anyone with that mindset…I mean what in the heck is up with a judgmental mentality anyway.  Who am I to judge…am I God…NO…I am Darla, the person who just so happens to come to YOU daily through different internet mediums to In Your Face MOTIVATE YOU. 

I LOVE my Big Shoulders because they provide me with emotional strength and the ability to “not sweat the small stuff” in this life.  They give me a very caring spirit and the understanding that negative statements usually come from people who are truly hurting, bitter from personal issues or life events not dealt with yet, and who really want and need help, but just do not know how to be vulnerable enough to let those feelings out in a healthy way to start the healing process.  In my position of trainer, consultant and coach, I wear many hats, and during the times of hearing or receiving negative comments, I throw on the “coaching/therapist hat” and become the BEST listener in this moment, keying in on any details that I may be able to offer help, dig deep into who that person is, provide insight and  validation, but at the same time, provide the guidance that says…HEY…TODAY is a new day and time to toss the old crap to the curb and begin a new healthy lifestyle…you get the picture. 

 The beautiful part about my life is that I choose to be POSITIVE in ALL circumstances,  personally surround myself with people who will nourish my soul in a positive way, and lean on one of my favorite quotes that states “Life is 10% What Happens to You and 90% How You Respond to It.”   Does that mean that I avoid all negative people, situations, and comments in my work…of course not…this is not realistic in my position...I am surrounded by people on a daily basis physically and online who are going through things that they are healing from or do not even realize they need help with, and all that is needed are some Big Shoulders to take on the task of helping and healing.  Am I ever offended by such comments and sucked down to a point of OH MY…WHY DO I CONTINUE TO PUT MYSELF OUT THERE….well…the answer is a Big Hell No.  If anything, I feel challenged to help even more…I always have HOPE, always PERSEVERE, and do not believe in failure…in fact, in my opinion, failure is GOOD and a stepping stone to dusting off and becoming a better person.  In this journey called life, I will continue to develop my Big Shoulders, continue to MOTIVATE…some may like me and some may not…that is OK and out of my control…but I will push forward with the cause of helping people adapt healthy lives…and for my Big Shoulders…ABSOLUTELY LOVE THEM!  Stay Healthy~

Chunky Monkey {Raw} Honey Almond Butter








No matter how long you've been cooking or baking I'll bet you have a kitchen disaster or two to tell. Now I'm not necessarily talking about kitchen fires, floppy souffles or sliced fingers but the minor yet equally embarrassing flops that you will remember always and share with friends when ever the topic arises.

Mine happens to be the time several years ago I tried to make almond bars for a Christmas party.
You see, and keep in mind I was young and didn't bake much, I thought that when the recipe called for 1 cup of   "Almond Butter"   that meant to take a cup of butter and add almond extract to it and mix...........


There. I've told you, now you too know my shameful secret. No biggie. You've done something like that too right? Humor me.






Fast forward several years and many cookbooks and blog reading later, I not only know what almond butter is but I've discovered how easy and especially economical making your own is! Good almond butter is apparently worth it's weight in gold and I feel a twinge of guilt every time I buy it. My kids love peanut butter but I'm just not a fan and find it too in your face roasted pea nutty.

Almond butter however is in my opinion mild, creamy and a perfect addition to apples or on a sandwich with bananas and honey. Yum!

So I've seen my blog friends like The Fit House Wife and  Naturally Ella  posting creamy and beautiful recipes for home made almond butter and I new I had to make it part of my life.

Turns out that not everything goes according to plan on your first try. Ever in my case. While this almond butter was a really delicious and a hit with the whole fam, it wasn't as creamy as I wanted it to be. I think maybe I tried adding too much almonds into my Vita Mix at one time. The tips I've heard from around the web discouraged using a Vita Mix at all to make almond butter but I was an eager new owner of a shiny new Vita Mix and the guy at Costco told me it could do absolutely anything, so I went for it!

I'm going to take Jen's advice over at The Fit House Wife  and try adding less at a time and maybe freezing the almonds to avoid them heating up so much like they did this time.




First, you need to soak your raw,  unsalted  almonds for 4-6 hours in purified water. This makes them easier to digest by removing the tannic acid, an enzyme inhibitor in the skin. 






If you have a food processor use it, otherwise give it a go in your quality blender like a Vita Mix or Blendtec. Again, use less almonds than I did, start with 1 cup of frozen almonds.


Starting on low speed and quickly going up to high speed blend for 2-3 minutes. DO NOT ADD WATER!
This will be scary. It won't look like it will blend into a butter, but it will. First it will look like almond meal, then a paste, then butter. 




After about 3 minutes on high speed.
Add honey and salt AFTER it's to the consistency you want.




Since it wasn't as creamy as I dreamed of I'm just going to call it "Chunky Almond Butter" lookin' at the glass half full my friends.  It was still delicious and the bit-O-honey made this a perfect afternoon, post-work out/after school  treat.






Spread it on toast, spoon it on your green apples or just dip your spoon in the jar and enjoy!




To make it official Chunky Monkey Honey Almond Butter, slice some bananas and drizzle a bit more honey over the top.







You Will Need: 

1 cup frozen Raw, Unsalted almonds (preferably Organic)2 teaspoons salt (I use Pink Himalayan)1/4 cup Raw Local honey  (buying local helps fight common allergies!)Optional:  1 teaspoon cinnamon
