Applesauce Zuccini Carrot Muffins



These are so light and fluffy! The Carrots make them nice and sweet!


Ground Flax Seed



Some call it one of the most powerful foods on the planet. There’s some evidence it can help reduce your risk of heart disease, cancer, stroke, and diabetes. That’s quite a tall order for a tiny seed that’s been around for centuries.

Although flaxseed contains all sorts of healthy components, it owes its healthy reputation primarily to three ingredients:
~Omega-3 essential fatty acids, "good" fats that have been shown to have heart-healthy effects.
~Lignans, which have both plant estrogen and antioxidant qualities.
~ Fiber. Flaxseed contains both the soluble and insoluble types.



Ingredients:
2 cups Unbleached flour1 1/2 tsp baking pwdr
1 1/2 tsp apple pie spice
1/2 tsp baking soda
1 TBSP ground flax seed
1/4 cup butter softened ( this is cut in half also, they turned out just fine w/out the xtra butter thanks to the applesauce)
3/4 cup sugar (this is cut in half, the carrots add the xtra sweetness)1 tsp vanilla2 eggs1 cup applesauce1/4 cup buttermilk1/2 cup grated carrot
1/2 cup grated zucchini1/2 cup chopped walnuts or pecans (optional)
 How To Make:
1. Preheat oven to 350 ° F. Line 24 muffin cups w foil bake cups, or spray.
2. In a med mixing bowl, combine flour, baking powder, apple pie spice, flax and baking soda. Set aside.
3. In a large bowl, beat butter with an electric mixer for 30 seconds. Add sugar and vanilla, beat until well combined. Add eggs, one at a time, beating well after each addition.
4. In a large measuring cup, combine applesauce and buttermilk. Alternately add applesauce mixture and flour mixture to butter mixture, beating on low speed after each addition just until combined. Add grated zucchini and carrots and walnuts, stir in.5. Spoon batter into prepared muffin cups, filling each about 2/3 full. Bake in preheated oven for 18-20 min. or until a wooden toothpick inserted into middle of muffin comes out clean. Cool in pans on wire rack for 10 min.
