Double Dutch Chocolate Pudding Raspberry Parfaits

Whether you are looking for something simple yet special to share with your sweetie or you've just had one of those days. This home made double chocolate pudding has you covered.

I for one have had  'one of those days'  the kind where nothing has gone particularly, out of the ordinary wrong yet I really just want to punch something and then take a nap. Zero energy to deal with my never ending to do list and feeling defeated with just about everything from making school lunches and dinner to keeping the kids happy and entertained. We won't even talk about the 2+ hours I spent this morning trying to figure out a simple bit of HTML coding on my blog and never did get anything accomplished.

Then there are these parfaits. On one hand, they were simple to make and tasted every bit as decadent as I'd hoped but on the other hand I had a completely different vision as to how they would photograph. How hard is it to make chocolate pudding look good?

O.K. I'm going to   a.) Start a diary so you don't have to listen to my complaining and whining here. and    b.) pour myself a glass of wine and dig into round two of this pudding. Tomorrow is a different day after all.

TIME        20 MINUTES PLUS CHILLING                SERVES       4-6

  1. 2 1/4 cups whole milk
  1. 1/2 cup sugar
  1. 2 tablespoons cornstarch
  1. 3 tablespoons unsweetened cocoa powder
  1. 1 large egg
  1. 2 large egg yolks
  1. 5 ounces semisweet or bittersweet chocolate, finely chopped
  1. 2 tablespoons unsalted butter, cut into pieces
  1. 1 teaspoon vanilla extract

2 cups prepared whipped cream
1-2 cups fresh raspberries

In a medium saucepan, combine 2 cups of milk with 1/4 cup of sugar and bring to a gentle boil over medium-high heat stirring occasionally.

In a small bowl, combine the cornstarch with the unsweetened cocoa powder and the remaining 1/4 cup of sugar until blended. Add the remaining 1/4 cup of milk and whisk until smooth. Whisk this mixture into the hot milk in the saucepan and bring to a gentle boil over medium-high heat, whisking constantly. Reduce the heat to medium low and simmer, whisking constantly, until the pudding is thick enough to coat the back of a spoon, about 2-5 minutes.

In a medium bowl, whisk the whole egg with the egg yolks. Slowly pour the pudding mixture into the eggs while whisking until thoroughly incorporated, then scrape the pudding back into the saucepan. Cook the pudding over moderate heat, whisking constantly, until it just comes to boil, about 2 minutes.

Pour the pudding into a medium heatproof bowl. Add the chopped chocolate, butter and vanilla and whisk until the chocolate and butter are melted and incorporated and the pudding is smooth, about 2 minutes. Transfer the pudding to six 6-ounce ramekins and refrigerate until chilled. (If not serving soon,  press a piece of plastic wrap directly onto the surface of the pudding in the bowl and refrigerate.)

Layer in a parfait cup with whipped cream and fresh raspberries.

The chocolate pudding can be covered with plastic wrap and refrigerated for up to 4 days.

Pear and Gorgonzola Salad with Winter Citrus Vinaigrette and a $100 Giveaway from Lucerne

So here we are.  It's that time of year where some of us  (I won't mention any names.... sniff sniff) are feeling a little full around the midsection. Which means many of us (sighhh)  will be looking to lighten up our grazing habits a wee bit.

I for one can not zip up my favorite skinny jeans and just received a very unsettling photo that I was tagged in on Facebook where I resembled the Marshmallow State Puff Man a little to closely.

Un. cool.

Soooo,  no more cheese platters and potlucks,  goodbye to the chocolate covered whatevers and off with the pastries and ham  OFF WITH THEIR HEADS!  and onto the salads, veggie soups and green smoothies. Who's with me!?

I know this is a pretty  common  classic salad but it's one of my very favorites, I mean it's a classic for a reason right? I always forget just how delicious it is until I take that first bite and roll my eyes towards the back of my head. Yeah, it's that good.

These cute little  Forelle pears are so crisp and sweet and pair perfectly with Gorgonzola's salty, nutty and sharp flavor. Gorgonzola is similar to blu cheese but a bit creamier, and doesn't have quite the sharp 'bite' to it as blue cheese. It is one of the world's oldest blue-veined cheeses. The Cheese is mainly produced in the northern Italian regions of Piedmont and Lombardy, Gorgonzola. I love it for crumbling on salads but also melting on top of potato soup, on pizza and on top of grilled fruit.

Winter Fruit, Yogurt and Marmalade Pasta Salad

Today for lunch I had this sweet and super tangy fruit salad along with a few pieces of white cheese. I have to say I feel like I splurged a bit but in reality it took all of 10 minutes to make and was a very simple and healthy treat  lunch.

“By posting this recipe I am entering a recipe contest sponsored by the National Pasta Association and am eligible to win prizes associated with the contest. I was not compensated for my time.”

Did you know that cous cous is actually a pasta? Similar to orzo, another small pasta that resembles rice, it is in fact pasta. Traditional cous cous is very small and delicate and cooks up in just a few minutes. Israeli cous cous is a bit bigger and resembles small pearls and also cooks up in just a few minutes.  I like to to use Israeli cous cous, which is a bit sturdier as a base for grilled salmon and as a side dish tossed with chopped veggies and olive oil or fruits, nuts and yogurt.

Apples and pears are plentiful right now and made a wonderful pasta salad tossed with pecans and raisins. A simple dressing of fat free yogurt and Seville Marmalade really made all of the flavors POP
I used a couscous, orzo and lentil medley for this fruity pasta salad so it was hearty and filling enough or a light lunch.

This was a big hit with the kids who love rice pudding. When cooked, Israeli cous cous has a similar texture as rice but is not void of nutrients as white rice is. Plenty of natural sweetness going on in this fruit salad and the Seville Orange Marmalade added a definite bitter zing.

Just a few simple ingredients to chop up while the couscous simmers for 8 minutes.

Pair with your favorite cheese for a perfect light lunch.

You Will Need
1 apple
1 pear
1 cup chopped pecans
1/2 cup raisins or dried cranberries
1 cup dried Israeli couscous medley
1 1/4 cup water
1 cup plain, fat free yogurt
1 cup Seville Orange Marmalade

Bring a small pot of water to a boil. Immediately add couscous, stir and cover. Turn heat down to low.  Simmer for 8 minutes. Remove from heat and let cool while you chop fruits.

Chop apple and pear, discard seeds. In a small bowl combine yogurt and marmalade.

In a medium size bowl combine all ingredients, toss to coat.

Don't start your day off with sugary cereals, this healthy breakfast will keep you feeling satisfied and guilt free. Kids and adults alike need a healthy, whole grain and protein packed breakfast to keep energy levels high and the brain functioning and it's best. This breakfast has it all nutritionally speaking and is delicious too!

More than 75% of Americans are calcium deficient. Calcium deficiency is not only responsible for loss in bone density but plays a role in nearly 150 different degenerative diseases, including obesity, arthritis, fibromyalgia, acid reflux, high cholesterol, hypertension, allergies, cancer, and others.

Calcium plays a very important role in the body to neutralize acidic blood. When we eat acidic foods, like red meat, or we drink carbonated drinks, like sodas or alcohol, our bodies become more acidic. This causes Calcium to be leached from our bones and teeth.

Kids Health

"Calcium deficiency is the major dietary deficiency in America's children today,"  Dr. Duane Alexander, director of the National Institute of Child Health and Human Development
According to statistics from the U.S. Department of Agriculture, 86 percent of teenage girls and 64 percent of teenage boys are "calcium deficient"; in other words, they lack the recommended daily amount (RDA) of calcium, which is 1,300 milligrams, the equivalent of about four 8-ounce glasses of milk a day.

Carbs have gotten a bad rap in the last several years and there are so many 'fad' diets that tell you to completely eliminate them from your diet. However, some studies suggest that up to 95% of Americans are eating refined carbs! The fact of the matter is that whole grains are a very important part of your diet and prevent numerous health problems.

Most of us are busy people and try our best to eat healthy but often pick up packaged foods claiming to contain grains.  I like to us a Multi Grain Cereal such as Quaker for baking muffins and cereals.

Healthy,  whole-grain foods  include the whole kernel and have not been processed. Research shows they can protect you from ticker trouble, diabetes, colon cancer, and possibly asthma and Alzheimer’s disease.

Simple Ingredients thrown together for a quick, get you moving and being healthy day.

You Will Need
1 1/2 cups Multi Grain Oats
1/2 cup oat flour (ground oats, preferably whole grain or steel cut)
1/3 cup chopped walnuts
1 teaspoon baking powder (aluminum free)
1 teaspoon ground cinnamon
1/2 teaspoon iodized salt
1/2 cup brown sugar
1/4 cup real butter
2 eggs (free range of course)
1 1/2 cups fat free vanilla yogurt
1 cup frozen tart cherries
2 tablespoons coconut oil for brushing ramekins

Preheat oven to 350F.  Brush 6 small ramekins lightly with coconut oil.
In the bowl of an electric mixer with cookie paddle attachment, add sugar, butter, eggs and yogurt, mix on speed 5-6 till smooth. Add dry ingredients; oats, flour, baking powder, salt and cinnamon. Mix on low speed to combine. Add cherries and chopped nuts and gently fold into the batter.
Pour evenly into the prepared ramekins 1/4" from the top. Bake for 30-40 minutes until lightly browned and a toothpick comes out clean.  Remove from oven and cool on wire rack. Serve warm.

Blackberry and Peach Sparkling {Camping} Sangria #SundaySupper

It's July (in case you didn't know) which means it's really. freaking. hot. here in Phoenix (in case the obvious eludes you) which means it is officially time to get the heck out of the desert (duh). I'm counting the days until we can go up north and watch the temperature gage in the car drop down into the 70's. Ahhhhhh...... Luckily, "up north" is only about 3 hours away so coolness is within our grasp and I'm not one to not grasp at opportunities when they are shoved in my face.

perfect to take camping, on a picnic or to the beach!

The correct path is the path that leads to a Sangria.......

Let's be honest for a minute shall we? I love camping, always have which may surprise some of you seeing as how I also enjoy some of the finer things in life. I love the fresh air, the nothing to do but sit and stare at the trees and the blue sky and watch the clouds slowly drift away and become sunset unimpaired by pollution and skyscrapers. I love campfires and I love snuggling in a blanket in July. I love watching my children run around in nature and make up games to play that don't involve batteries. I love watching my son's help their 4 year old sister find a fuzzy caterpillar and I love that she loves caterpillars.

How I like to spend the day camping.

All of the love and fuzzy feelings aside, camping is without a doubt a LOT of prep work and then cleaning up. Now, add 4 kids to the scenario and you can times that work by1 million. Yup, that's 25,000 x's per child, it's a scientific fact.

How my children like to spend the day camping
{this was exactly 8 minutes after I washed, dressed and did her hair for the day.}

Which brings me to sangria's. Because who the hell goes camping without a little bit of happy juice?

Sure, you could bring plain old wine or beer but wouldn't it be nice to plop down in your brand new anti gravity lounger after a long day of driving (yes 3 hours is a long drive with 4 kids and a dog) and after hours of setting up camp (yes, we tent it) and wrap a blanket around you and your sweetie an sip on a light and fruity sparkling white sangria?

I knew you'd understand.

The best part? You make this sangria by literally throwing a handful of ingredients into a big pitcher and then pour into little mason jars, chill for at least 8 and up to 48 hours while they get all kinds of better. Perfect for camping, picnics or just sitting by the pool.

So let's get to it shall we?

You will need

4-6 small Mason jars
1 bottle of dry white wine such as Sauvignon Blanc (the one pictured above, found at World Market was fantastic!!) ask your wine guy if you're not sure.
1- 1&1/2 cups peach nectar (depending on how sweet you like it)
1/2-1 cup peach flavored vodka (depending on how boozy you like it)
2-3 cups low sodium club soda (depending on how bubbly you like it)
1 heaping cup fresh blackberries, rinsed
2 large white peaches, pitted and chopped into small cubes

Mix the liquids in a large container and set aside. Place a small handful of berries and peaches into each Mason jar. Pour the liquid mixture into each jar and close. Refrigerate until ready to enjoy. These will keep in the fridge or cooler on ice for up to 4 days. Beware, the fruit gets pretty boozy the longer it sits!

Banana Split Popsicles {sugar free & healthy}

Inspiration for today's post comes from the fact that is 113F out and getting. even. hotter. The fact that it doesn't rain here in Phoenix makes me wonder how the hell so many idiots people decided to make this their home. It's a mystery..... and I'm Native..... idiot.

To make matters even more miserable, I work in the Operating Room aka meat locker (that didn't come out right). Meaning that we keep the AC around 59F-62F at all times and complain when it reaches 66.7F.  We are a strange group us medical people. So when I leave the perfectly normal frigid temps of the O.R. and walk outside into the blinding desert sun (no windows in surgery, could be an apocalypse and we'd never know) my internal body temperature starts to boil in exactly 13.2 seconds. Which is exactly how long it takes me to get to my car, open the door and step right into HELL, at 125+ degrees F.

Leather seats, wearing shorts, with no window shade, no parking garage, in Phoenix, in July. I'm all kinds of smart.

Eating a Banana Split on a stick = Very, very smart.

What I do have going for me are Popsicles. Granted I've seriously considered rubbing them all over my overheated face and body on more than one occasion. Desperate times, desperate measures.

Typically, light and fruity Popsicles or even frozen fruit are our only source of snacking and desserts here during the summer months but seeing as that it's a Major Holiday in July I decided to step dessert up a level.

What's even better than a big Ooooey Goooey Banana Split? A Banana Split that is combined together, layer by layer and then frozen on a stick to slowly enjoy while you sit waist deep in your pebble tech, salt water pool. With your big, ridiculous floppy hat of course.

Strawberry, coconut puree, frozen bananas blended with vanilla almond milk and fresh cherries and pineapple in every bite. Drizzle with chocolate and sprinkle with chopped peanuts.
Summer just got better.

I learned a few things while making these Banana Split Popsicles,

  1. Making and attempting to photograph popsicles in July in Phoenix is a feat worthy of serious admiration.
  2. Banana Splits in popsicle form are sheer genius that you can eat single handedly while sitting in the pool, no spoon required.
  3. I need a cherry pitter thingy-ma-jig.
  4. My mom just called me a lazy bum because I want a cherry pitter thingy-ma-jig. She's mean.
  5. It's perfectly acceptable to dip fresh cherries and pineapple into melted chocolate before dinner while you are waiting 3-5 minutes in between popsicle layers to freeze.

You will need

A ZOKU popsicle maker or other popsicle mold
2 cups fresh strawberries, greens removed, or not (I leave them on, lots of nutrients!)
1/2 cup coconut milk (in a can)
* tablespoon monk fruit in the raw
2 fresh bananas
1/2 cup vanilla (or plain) almond milk)
*1 tablespoon monk fruit in the raw
1 handful fresh cherries, pitted and cut in half
1 handful of pineapple tidbits
1 cup semi sweet chocolate, melted
1/2 cup chopped peanuts

To Make

In a blender, combine strawberries, coconut milk and monk fruit in the raw. Blend until smooth. Carefully pour into popsicle molds 1/4 deep. If using a ZOKU, wait 3 minutes till frozen then pour in the banana mixture. If using old fashioned popsicle molds, put in freezer until frozen, about 2 hours.
Rinse out strawberry puree from blender and then add bananas, almond milk and monk fruit in the raw. Blend until smooth. Drop a few cherries and pineapple tidbits into popsicle molds then carefully pour in banana mixture. If using a ZOKU, let freeze for a few minutes then remove and drizzle melted chocolate on top and sprinkle with chopped nuts.
